Why is the helmet made of copper?
Copper is the material of choice for making the helmet to add flavor to the distillate. During distillation, copper reduces the sulfur flavors in the resulting distillate by reducing the levels of sulfur compounds such as dimethyl trisulphide.
Why is it so important to have copper accessories like a helmet?
Sulfites: humans are especially sensitive to their presence. Even tiny concentrations of dimethyl trisulfide are perceived by the human senses as unpleasant. This is where the chemical properties of copper are critical.
Sulfites initially react with the hydrogen ions in the liquid to form hydrogen sulfide, which imparts an unpleasant "rotten egg" odor, is toxic and highly flammable. Hydrogen sulfide is able to react with many metal ions, one of which is copper.
How does passive reflux work?
Passive reflux is a process that occurs due to the loss of heat from the system to the environment. Energy from the distillate is transferred to the whiskey column and out to the environment, causing the distillate to condense. Each time the product is condensed and sent back down the column, in effect another distillation has taken place on the distillate.
Why is the onion bulb shape most commonly used for helmets?
This design element provides more surface area during the distillation process, resulting in a smoother flavor in the finished product.
